We are about to find out for certain.

I have made an offer (https://www.facebook.com/yishan/... if you can see it) to several of my friends that if they eat only burritos for two weeks (14 days) and blog about it, I will pay for all their burritos plus a meal at a location of their choice in downtown Mountain View.  If they make it 7 days, I'll still buy them lunch at a place of my choosing.

Now that the event is underway, we've learned a few things:

  1. There is a taqueria inside Antonio's Nuthouse.  It's not very good though[1].
  2. June Lin delights in well-endowed burritos[2].
  3. Those beef tongue burritos really aren't that bad[3].
  4. Eating burritos every day is really messy[4] - "The worst part of this burrito challenge is that burritos are fucking messy. You don’t notice it when you have say… one burrito per week, but when you get to ~2 burritos a day, you start noticing that your laptop becomes sprinkled with grease and your pants have various black spots from black beans falling onto you."
  5. Peruvian food is not the same as Mexican food and does not include tortillas, and if you think so, you're a racist[5].
  6. Breakfast burritos are really easy to make[6].
  7. The way to make eating only burritos tolerable is lots of alcohol[7].

Kidding. In all seriousness: Provided that the burrito filling ingredient list was pretty broad, there's no reason you couldn't eat burritos for every meal from a health perspective (once again, unless there are restrictions about beverage companions and things that could be inside the burrito). You'd probably start lacking fiber (whole wheat tortillas baby!) and maybe a few vitamins or what not, but the most important thing would just be portion control. Obviously, if you ate a huge super burrito for every meal you would be putting down at least 3600 calories a day, so you'd need to either eat smaller burritos, healthier burritos, or work out Michael-Phelps-style.

You would definitely have to make some changes to the ingredients inside so that you were getting a better protein/fat/fiber/carb balance, and make sure you were including lots of veggies for vitamins and other stuff.

I understand that the spirit of the question is more about eating the typical taqueria style burrito for every meal. I think the answer is that you'd probably either start gaining weight or have to work out a ton, you'd probably start lacking some important nutrients and vitamins, and you'd have a far too high proportion of fat and carbs to the protein and fiber in your diet. Moreover, you'd have to take a nap like, at least three times a day.

Full disclosure:  I am not a medical doctor, just a health nut and a foodie.

It really depends on the burritos.  Pre-made meat/cheese/starch burritos you get in the Mission?  Even if you worked out constantly, you'd still consume way more saturated fat and sodium than what's recommended, probably leading to hypertension, high blood pressure, and heart disease.  Depending on your fillings, you might not even get the daily vitamins you need, either.

However, if you're asking about burritos as a type of food, one you can make yourself, you can make sure that you could, in theory, live on them.  For example, in the morning, you could make one with eggs, sauteed veggies, and a little cheese, wrapped in a whole-wheat tortilla.  You have a little starch in there, at least one serving of veggies, and protein to keep you full and energized.  You could make a stir-fry, wrap it in a tortilla, and call it a burrito if you wanted.  If you look at it that way, as long as you're getting your veggies, vitamins, and lean protein, and not overloading on fats, you could eat a "burrito" for every meal and be ok.  You could even maybe make dessert "burritos".  Maybe Nutella and banana slices?  A "tiramisu" burrito?  Ok, they're not authentic, but it still works.
Consider the fact that most traditional (North) Indian meals are essentially burrito-esque in their make up. Approx 400Million people eat "burritos" every day x 1 or 2 or 3 meals.  so yeah - go for it.
